You probably already know that most cooks will tell you to cook your pasta to “al dente,” which just means that the pasta is tender with a little bite (instead of being mushy). The ingredient list for our mac and cheese recipe isn’t a long one and as you can imagine the type of pasta and cheese you use makes a big difference. The sauce should be well seasoned - not with lots of extra spices and ingredients, just simply with salt, pepper, and maybe a tiny bit of mustard to add a touch of tang.No mushy pasta! We prevent this two ways (I’ve shared them below).After baking there needs to still be enough sauce that’s not absorbed into the pasta so every bite is a creamy one. The sauce to pasta ratio is important to get right.That said, I do think there are a few key elements for the best mac and cheese. Once the top is browned, remove the mac and cheese from the oven and allow it to cool for a few minutes before dishing it out and devouring.There are lots of recipes for macaroni and cheese in the world and to be completely honest, I’d probably love most of them.It will take approximately 15 minutes for the top of the macaroni and cheese to turn a nice crispy brown. You are wanting to allow the top to brown. Return the dish to the oven, without the lid.The mac and cheese will look creamy and melty at this point. Put the macaroni and cheese into the oven and cook at 350 degrees for between 30 to 45 minutes until the cheese is melted and combined with the evaporated milk.Cover the baking dish with aluminum foil or use the oven safe lid for your pan.Season to your liking with salt and pepper.Pour the evaporated milk over the top of the pasta/cheese layers.

Now you'll add the rest of the cheese to the top of the second layer of cooked pasta.Add the second half of the cooked pasta to the dish on top of the layer of cheese.Cover the top of the pasta that is in the dish with half of the cheese.Put half of the cooked pasta into an oven safe dish.I used whole grain but vegetable or white pasta will work too. Any type of pasta will work for this recipe.

Boil the pasta according to package directions.
